Here's a major shortcut. Just mix and bake. Here's the recipe for one loaf. Double it if you would like to make a loaf for a friend.

The Amazing Amish Cinnamon Bread Alternative

1 stick butter
1 cup sugar
1 egg (I used 1 tablespoon of vinegar because I didn't have any eggs on hand, it worked!)
1 cup buttermilk (I used 1 cup skim milk and 1 tablespoon lemon juice, again, it worked!)
2 cups flour (It tastes pretty good with whole wheat flour as well.)
1 teaspoon baking soda

Cinnamon/Sugar Mixture:
1 teaspoon cinnamon (I cheat and add a little more.)
1/3 cup sugar
Cream together butter, cup of sugar and egg. Add milk, flour and baking soda. Put half of the batter (or a little less) into greased loaf pan. Mix in separate bowl the 1/3 c sugar and cinnamon. Sprinkle 3/4 of cinnamon mixture on top of the 1/2 batter in the pan. Add remaining batter to pan and sprinkle with last of cinnamon topping. Swirl with a knife. Bake at 350 degrees for 45-50 min. or until toothpick tester come clean.
